Raindrop Gumdrops

Ingredients

  • 2 cups Sugar, plus a little extra for decorating
  • 1 1/3 cups Unsweetened Applesauce
  • 2 3-oz Packages Jell-O, flavor of your choice
  • 2 envelopes Unflavored Gelatin
  • 1 tsp Lemon Juice
  • Mini Raindrop Cookie Cutter
  • Rainbow™ Blue and/or Royal Blue Confectionery
    Wafers, for dipping

Directions

  1. In a medium saucepan, combine sugar, applesauce, Jell-O, gelatin, and lemon juice. Let it stand for 1 minute.
  2. Bring the mixture to a boil over medium heat, stirring constantly. Boil for 2 minutes.
  3. Pour into a greased 9”x13” pan.
  4. Place in the fridge for 3 hours, until firm.
  5. Run a spatula along the edges of the pan to loosen the gumdrops. Turn onto a cutting board.
  6. Using raindrop cookie cutter, cut gumdrops into shape.
  7. Melt confectionery wafers according to handling instructions.
  8. Using dipping fork, dip each gumdrop into melted wafers to coat. Place on large baking sheet lined with wax or parchment paper. Let dry.
  9. Sprinkle extra sugar on top to decorate.
  10. Store in an airtight container.
