Ingredients
- 2 cups Sugar, plus a little extra for decorating
- 1 1/3 cups Unsweetened Applesauce
- 2 3-oz Packages Jell-O, flavor of your choice
- 2 envelopes Unflavored Gelatin
- 1 tsp Lemon Juice
- Mini Raindrop Cookie Cutter
- Rainbow™ Blue and/or Royal Blue Confectionery
Wafers, for dipping
Directions
- In a medium saucepan, combine sugar, applesauce, Jell-O, gelatin, and lemon juice. Let it stand for 1 minute.
- Bring the mixture to a boil over medium heat, stirring constantly. Boil for 2 minutes.
- Pour into a greased 9”x13” pan.
- Place in the fridge for 3 hours, until firm.
- Run a spatula along the edges of the pan to loosen the gumdrops. Turn onto a cutting board.
- Using raindrop cookie cutter, cut gumdrops into shape.
- Melt confectionery wafers according to handling instructions.
- Using dipping fork, dip each gumdrop into melted wafers to coat. Place on large baking sheet lined with wax or parchment paper. Let dry.
- Sprinkle extra sugar on top to decorate.
- Store in an airtight container.
